I woke up Wednesday morning after election day and realized the US still didn’t have a winner for the presidential race. I had a feeling it was going to be a long day (or week?! or month?!) and I was going to need a project to keep my mind busy. I’ve been wanting to make Scottish shortbread for a while. I headed to the grocery store which was surprisingly quiet at 7am. I’m guessing people probably stayed up really late and were sleeping late. I got some butter, flour and sugar. And I got some ingredients for caramel and chocolate topping.
It was a fun multi-step recipe and honestly I was too tired to eat it last night. We were in bed and asleep by 9pm! This morning I cut it up and wow is it rich and delicious!
I will say I am not a huge caramel fan and this caramel is too thick for my taste. If I used half as much it might be okay. But I am going to make just the shortbread next time without toppings. But all in all this was so much fun to make and it is yummy!
