At the grocery store the other day I spotted a nice duck breast in the meat section and decided to try cooking it. Duck is one of those things that you usually either like or hate, but once you learn how to cook it you could never hate it. There is a trick to cooking it right and you can do it too so let me explain.
First the duck breast will come with a side that has a thick piece of fat on it. Don’t cut this off, instead slice through it four to five times and leave it attached. This is the flavor, without this duck just tastes like liver and that’s no good.
Next place the duck fat side down in a pan on a medium-high heat. You want that fat to basically crisp up so let it go for a while and when you see the meat start to look cooked just above the fat flip it over for five to seven minutes on medium heat to cook the other side. This is the beauty that you will behold:
But you didn’t start reading to learn how to cook duck so let’s get to the best part! Now that you have a pan full of duck fat, toss in some fries and let those suckers go for about eight to ten minutes then flip them over as best you can.
Don’t worry about burning them, I’m sure you won’t be too far away and you will be inspecting them as they cook just like I was. You feel a bit like a mad scientist doing something like this because your goal was to make the fries but instead you’ve cooked an entire meal!
When your fries are done put them on a paper towel, salt them then toss them on a plate or in a bowl. And look at the fabulous creation you have made:
I have to say, these fries were amazing and the duck was a pretty good side dish as well! Take a look at the salty, crispy goodness one more time.
